i did a search and found a lot of protein bar recipes here and on other sites. i tried one and it came out really good but i would like to add some thing so that it's not so soft and chewy... something to give it a crunchier texture. i tried adding cereal, but the it sopped up the moisture and didn't retain it's crunch. i've heard of soy nuts and texturized protein, but don't know where to get them please help

You can get both of these at a natural grocery; soy nuts might be okay but I don't think I'd add texturized protein to a protein bar. My co-op has a cereal that looks like grape nuts but soy based; really high in protein - wonder if something like that would work? I think any nuts or seeds would be good depending on your fat allowance.

Chopped walnuts are a great add in. And the fat in english walnuts is nothing but good.

Fsimmons, Could you share your recipe? I've been looking around for lo-sugar, high-protein bar recipes, but I have yet to find one that I like. Thanks!

this is the 1st time i made it. so the next time i'm gonna try non-fat cream cheese instead of yogurt and 1/8 to 1/4 c honey. i'm also adding crushed almonds to the outside. i can't wait!! I'm not sure if you're gonna like this one b/c it came out pretty sweet, but you can modify the amt of honey you put in it to taste.
1 c vanilla protein powder 3/4 c oats 1/3 c yogurt (or peanut butter) 1 c partly crushed berry burst cheerios (or rice crispies) 1/4 c wheat germ (or sesame seeds) 1/3 c honey 1/2 c dry strawberry slimfast (or dried milk) 1-2 Tbsp water
mix all ingredients together. Line pan with wax paper and press mixture into pan. (Optional: sprinkle almonds on top and cover with 2nd piece of wax paper and press into the mix so they stick.) Refrigerate and then cut into 8 bars. Make sure you have plenty of water when you eat them b/c they're thick and make you pretty thirsty.
