And if you have healthy takes on classics (I would love a healthy Apple Crisp recipe, if there is such a thing). I have made chocolate mousse with tofu, which was really great.
Actually one of the easiest and best things you can do is find a recipe of your choice you like, and substitute. For example, olive oil in place of butter, substitute yogurt in other places. Use protein powder for part of your baking flour. You get the idea.
