Ok, ha ha...the rest of my body is in proportion weight/height etc, except for those delightful Fat ankles. How can I get definition in my calves but without developing my ankle muscles?

You suffer from water retention?
Big ankels are often a sign of the body holding water or/and toxins. Drink a lot more and clean your diet!
