I apologize if this has been asked or discussed before, but being new to FT and working out in general I have to ask the question. Reading the information on the site it mentions stretching. Both before starting the workout and in between the different exercises, my question is: where can I find information on how and what to stretch, at the beginning to get ready and in between by targeting a specific muscle group.

Very true - think of taffy - when it is cold it will snap if pulled on, when it is warm it stretches. There is an excellent book on static stretching by Bob Anderson called (appropriately) Stretching. The Wharton's also have published an excellent book on Active Isolated Stretching - the new form of stretching that is being practiced by the people who train Olympic athletes and by some personal trainers. I have found it to be very beneficial for my clients, they get a better stretch and have increased their flexibility more tahn with just static stretching.

the site www.howtostretch.com shows some good pictures of stretches and explains why you have to stretch, and how far to go etc.
