1 to 2 minutes are pretty sufficient, you can stretch or get a drink during that time.

It also depends on your goals and program style. If you are trying to gain lots of strength/size lean towards the 2 min rest...but if you are leaning out or go for endurance a good rest can be 30 sec. Remember that you grow/repair during your time off...not rest in between sets.
