Your rest days are your recuperation days. This is the time your body needs these nutrients to rebuild, heal, and grow. You could probably reduce your intake of fats just a touch (make sure you're eating the right fats, though), but keep your carb and protein intake high. Protein is for the obvious; carbs are to replenish your glycogen stores within your muscle cells. Vitamins and minerals are also very important.
The way that i have always done it is figure that those are the times that your body grows so make sure that you give it plenty of fuel. just like bennett said cut down on the fat a little but make sure you still eat normal.
