I am 6'1 175lbs. I want to gain some mass and size without getting fat. Right now for supplements I take, Glutamine,Protein shakes, and Z-mass (test. booster). I have HMB, and a big bottle of Hydroxycut but will adding those be too much? any ideas what i should add or not use?

Well you could tell us your age (I presume you're male), your work out schedule, experience etc.
If you just started then just keep to vitamines and proteins and you'll be all fine.

To gain mass, you'll have to consume more calories than you burn daily. Check out the nutrition section here at ft for a recommended daily caloric intake. At 21, I don't see that you need a test booster...although ZMA can help you with falling asleep and recovery.
As far as fat burners, they're counter-productive if you aim to gain mass. Save them for when you've gained weight and are in the cutting/definition phase. Glutamine and protein shakes will definitely help.
Good luck!
