A better Deviled Eggs

I tried making deviled eggs healthier last night - here is what I did:

Peeled and cut in half 15 hard boiled eggs. Discarded all but 2 yolks. In a bowl i mashed the 2 yolks, 1 tbsp mayo, 6 egg white halves, spicy brown mustard. Not creamy enough. put it in the food processor. Pureed, still kind of dry. Added a Tbsp ff half anf half. Creamier, but no flavor. Added a tsp dry mustard. A sprinkle of salt. Now it had a little more flavor. Put it all into a plastic bag, cut the corner off and piped it into the remaining egg white halves, sprinkled with paprika.

Husband didn't notice that they were any different.

I found them to be bland. If i were just making them for myself I would add cayenne pepper, mayeb even horseradish mustard. that would perk it up.

Has anyone else had any success making healthier versions of deviled eggs?

Hey that sounds really good. I don't mind just the plain old egg whites though. One great tasting treat would be egg whites, pepper, and a couple of sprays of calorie free I can't believe it's not butter, butter spray.
