Pico De Gallo
Here is a great way to liven up your low fat burgers and chicken breasts, fish or even shrimp - It is fresh and tasty!
2 medium tomatoes, mine weighed 4.5 oz each, about two cups
½ a large onion, 4oz, about ¾ c
1 jalapeno pepper, 1 oz, seeds removed
1 medium lime, mine was about 4.5oz
½ bunch of cilantro (1 cup when chopped)
Dice the tomatoes, onion and jalapeno into small cubes. Chop the cilantro. Place in a medium bowl. Roll the lime around while pressing down on it, then cut in half and squeeze the juice into the bowl with the other ingredients.
This made about 3 cups.
Total 170 calories
6g protein
41.4g carbohydrates
<1.6g fat
8.4g fiber
Per ½ cup serving:
28.3 calories
1g protein
6.9g carbohydrates
.26g fat
1.4g fiber
It is even better if you cover it and let it meld together in the fridge overnight!
You can top just about anything with it, try it on burgers!

That's a great recipe, thanks! One of my favorite meals is chicken breast tenders topped with cottage cheese, pico de gallo and low fat cheese on the top, bake in the oven. It's very yummy and feels like I'm cheating, even though I'm not.

Sounds good, anni! I love anything topped with pico de gallo or salsa verde! So much flavor for so little calories!

Sounds delicious asimmer i will be trying it this weekend and need to add some calories to my diet and what a better way!!! and it's low in fat that's just what i needed, good post:big_smile:

Do you cook the chicken with this on top, or cook the chicken then throw it on top as a topping, i'm sorry, lil confused, will it work with the foreman grill?

Throw it on afetr cooking. it is really good instead of salad dressing on a grilled chiken salad, too.
But it is good mixed into eggs before you scramble them, also....
