Wow - I made some falafel and followed the directions to broil the patties instead of frying them - I have discovered a new healthy snack food!
Falafel is a good source of complex carbs and protein, plus it is tasty!!!!!!

Oh - it came in a box, I got it in the health food section at the grocery - contains ground fava beans and spices, mostly....

Found a recipe online:

1 cup dried peeled fava beans (7 ounces), soaked overnight
3/4 cup dried chickpeas, soaked overnight (not required)
1 small onion, finely chopped
1/3 cup minced flat-leaf parsley
2 tablespoons minced cilantro
1 garlic clove, minced
1 teaspoon baking powder
1 teaspoon kosher salt
3/4 teaspoon ground cumin
Pinch of crushed red pepper
3 tablespoons water
Pure olive oil or canola oil, for frying

Drain and rinse the favas and chickpeas and put them in a food processor. Add the onion, parsley, cilantro, garlic, baking powder, salt, cumin and crushed red pepper. Pulse, scraping down the side of the bowl, to form a coarse paste. Add the water and process until the mixture is gritty but fine and brilliant green. Scrape the paste into a bowl.

In a medium saucepan, heat 2 inches of oil to 350 degrees F. Scoop rounded tablespoons of the falafel mixture into the hot oil and fry in small batches until browned and crisp, about 2 minutes.

***

Sounds pretty easy, though I think I may use canned fava beans instead. If I get some time this week I am going to prepare a batch of these.

You can skip frying them in oil by oiling a cookie sheet and putting the patties on the cookie sheet, spritzing them with oilve oil and broiling them 2-3 minutes each side, until golden.

Couldn't find any fava beans at the local grocery store, but I read another recipe that said Chic pea's could be used for replacement.

I figured I would just oil my pan with olive oil instead of cooking them right in it. Probably be a little less wasteful of my expensive olive oil.

Hopefully I will get a chance to cook them this weekend. I will let you know how they turned out.

I tried out a modified version of the recipe. They made a pretty big mess, but I think with a food processor it would have been easier.

They don't look very attractive either (kind of like fried barf), but they taste awesome! A little too much work though, so I probably won't be making them again.

Look for the mix - it was really easy! I think the brand was fantastic foods.
