I am horrible at dieting...my husband just recently got a gym membership and thought it would be nice to add me to the membership! Is that a hint or what? JK...Seriously I have gained nearly 45 pounds of the past year and a half. My lifestyle has totally changed and so have my habits. I no longer manage a restaurant 60 hours a week, but work in a college office. To make matters worse, I work for a culinary school.
I have truly noticed that I need to make a change in my eating and activity. About six months ago, I forked out some serious cash for a trainer, only to have her get me more frustrated with not losing weight.

I think I can handle jumping back on the wagon and doing the excercises, but it is the diet that is worrying me. Does anyone have some quick and easy solutions for food for someone that hates to cook during the week, as I also am a full time college student?

One of the best things you can do is to start reading labels. Also keeping a calorie journal as well. There is no true fitness without a healthy diet.
I am all for using vegetables as filler foods. A small baked potato with dinner, or a cup of broccoli and baby carrots as sides help fill the void but don't break the calorie budget.
