What are some good back and shoulder exercises that will get great results?

Pull-ups, bent-over barbell rows (wide grip & go heavy), close-grip cable rows, heavy dumbell rows, and T-bar rows are all excellent for the middle and upper back. For shoulders: lateral raises, front delt raises, military press, Arnold press, bent-over lateral raises (for rear delt development), and shrugs. Of course, don't do all of these on the same day (that's a killer workout!).

If you haven't been doing pull-ups, start doing them, you'll put on muscle quickly and gain more definition. If you can't do them unassisted, have someone spot you by having them hold your ankles or spot yourself by putting a bench under your feet. Your grip should be a little wider than shoulder width. Start with a simple pyramid, 12X, 10X, 8X, 6X, 12X, once you can do that, start switching it up by varying your grip width and ad weight by holding dumbbells between your legs. As for your shoulders, I would just stick with what jbennet listed.

It is not hard to find good exercises for the shoulders and back. Even this site has most of the good ones.

For plain old size, compound movements are the way to go. Military press, Arnold Press, Dumbell press, Upright Rows for shoulders. But you should also include laterals and bent laterals to hit the areas of the shoulder that pressing movements cannot hit. For back, Bent Rows, Chinning movements, Deadlifts, etc. Just experiment and find what works for you.
