This may be a dumb question, but I am compelled to ask it.
I've got a very lean roast in the oven for this evenings dinner. My plan is to put the drippings in the fridge for most of the day so I can easily remove whatever fat there may be. Then heat it, add some cottage cheese that I have run through the blender, a little red wine and some mushrooms. Probably serve with wild/brown rice and the beef of course.
Are beef drippings just inherently bad, or is it okay to use them once you've removed the fat?:surprised:

Will there be anything left when you remove the fat?
I think the drippings are mostly blood anf fat, so if you remove the fat, youhave leftover 'juices', which I would think are beneficial, should have iron in it, right?

That was my thinking as well, but today is my splurge day so I can rationalize just about anything, consequently I can't be trusted. I only have rice about 3 times a month and I was looking for a way to make it a little more festive without messing up my nutrition for the day.
I'll let you know how it turns out.

You can have rice more often than that, anni, it is a good carb and would bring your calories up without having to eat a lot of it.
