I am giving this a bump because bb pancakes are the best!!! I just made them with applesauce (a la bb1fit's recommendation) and they are soooooo tasty! Also - a spritz of I can't believe it's not butter spray really boosts the flavor!

I make them the night before and throw them in the fridge if I know I'm going to have an on the run morning. They heat up nicely in the microwave and you can eat them in the car (without the syrup, of course)!

is this a healthy pancake recipe?

1 cup oat bran
1 egg
1tbsp. canola oil
1 tbsp. honey
2/3 cup soy milk

I bought this oat bran waffle and panckae mix and this is the recipe they give on the back. sounds good but are there any places you see to add or subtract? instead of a whole egg maybe 2 egg white?

The fat in 1 egg is beneficial, as long as it fits into your daily allotment.

If you are a milk drimker, you could sub. skim milk for the soy milk, a little better quality protein and possibly less sugar.

I have some maple and strawberry exctract, would it be ok to substitute these instead of vanilla. I can't find the nutritional info for maple and strawberry. i think the maple would taste good
