i don't really have any specific recipies to use when preparing this delightful beef alternative, i usually just brown it and season it really well, but if anyone (namely you, bb1) has any they'd like to share with me i'd love it.
ideas i've had include buffalo meatloaf (of buffaloaf as i call it), meatballs, and chili. i know the possibilities are endless so feel free to fire away with the bison ideas.

try grilled buffalo steak with montreal seasoning. Howdie I want to try your buffalo loaf. You have really out done yourself in your quest to whoop us all you have eaten a whole buffalo. I am shure this will stir great emotion in chuckles. That could lead to the geezers pulling up to the top.

the last thing i need is to give him more motivation...
i'll try the steak when i can afford to buy it. right now i'm restricted to the extra lean ground because it's only 4.99/lb. and it fits my wallet better.

We eat buffalo(bison) alot. It tastes very good to me as is. I always season beef, but not the bison usually. We use it for chili alot instead of beef. (first thing I can think of). Use it in place of beef in any dish, whether stroganoff, pasta, etc.

MMM. had to add that I used ground buffalo for my chili last night and it was really g ood, my husband liked it a lot and it wasn't dry or greasy. very tasty!
Here is what I put in it:
coat pan with olive oil and Saute until meat is browned but not dry:
1 lb ground buffalo
1 med onion, chopped
2 cloves garlic, minced
In a large pot combine:
1 can low-salt stewed tomatoes
1 can dark red kidney beans, drained and rinsed
1 can light red kidney beans, drained and rinsed
1 can salt-free tomato sauce
1 can sliced mushrooms, drained
1/3c ketchup
1 packet chili powder
mix well, add cooked buffalo/onion/garlic , stir, and let simmer for 1/2 - 1 hour

We made buffalo burgers this weekend, and even the kids who hate anything "healthy", really put them away.

Here in South Dakota we can find buffalo at most grocery stores, even our Walmart carries it. I don't even like the taste of ground beef anymore compared to ground buffalo.

The Cub Foods carries it here, and I also found it at Whole Foods market. You can also look it up online and order it online.
