im curious if theres anything outstanding about this veg nutritionally speaking as ive just bought my very first one :)
i did a search but couldnt find any info specific to this veg other than it has vit c and beta caroutine (no idea what this is im about to do a search on it :) )and potasium
any info would be appreciated as im finding the science of food quite fascinating and like to know these days what im feeding my body so i can try and eat as well as possible

Butternut, like the other winter squashes, has a lot more to offer, nutritionally speaking, than summer squashes and zucchini. Butternut's deep-orange flesh is richer in complex carbohydrates and, as you might guess by its color, in beta-carotene. Butternut squash is also a very good source of dietary fiber, and supplies vitamin C, magnesium, manganese, and a good amount of potassium.
