If my calorie needs per day, without exercise, come to about 2,500 and I burn 1,300 more with my daily exercises if I ate between 2,000 - 2,500 is that too much of a deficit?

Your deficit should really be anywhere between 250 and 500 calories. Anything more than that, you'll be killing your metabolism and losing muscle.

Then I assume it's ok to keep the exercise the same, if I choose to, and then I can eat more, correct?

yeah, you can have the deficit be in the form of exercise... (cardio and/or weights)
