First I would like to thank everyone for being so helpful and supportive. It really helps! Now, for my question. I have no problem hitting my protein goal each day but I seem to come up quite a bit short on carbs. Should I try to increase my carb intake to get closer to my target? I have read in several fitness/weight training mags that high carb intakes can lead to excess fat storage? Any help would be appreciated.

I think the question is how do you feel? Low carb diets are associated with being tired and "dragged" out. If you feel ok and can keep up with your training it shouldn't be a problem. I follow a lower carb diet with no problem (for many years) when I start feeling tired I add some extra complex card to the diet. Get to know your body as we are all different!!!

I heard complex carbs are carbs that have fiber. But when counting my total carbs for the day should i subtract all my fiber since fiber goes right through your system.

complex carbs (rice, potatos oats)do have fiber but what you are talking about is what is known as fiberous carbs like brocolli, spinanch, cauliflower, cabbage. You can subtract the fiber if you wish. Some people do, doesn't make a BIG difference one way or the other.
