I have been tweaking this recipe for about a month now, figure I'd share it. It is very healthy for you.
1 red onion
2 red peppers
2 carrots
2 zuchinis
1 box sliced mushrooms
4 cups stock of your choice
1 can kidney beans
1 14oz (or 28oz, I use) can of tomatoes
pepper
thyme
oregano
I just dice all the vegetables and stir fry it in some olive oil for a few minutes, then throw everything in one big pot together and bring it to a boil. Then I let it simmer for about 20 minutes.
