To those who have Costco I found some really good chicken sausage today.
Its called Casual Gourmet Red Pepper and Basil Chicken Sausage. Here's some basic nutrition info:

Sodium: 640mg (a bit high but hey its sausage)

Because of the high sodium I wouldn't recommend it for daily eating but its great for a change of pace. I cut up a link with some roasted peppers, onions, red yellow and orange peppers, sugar peas, and some spices and cooked it in the pan (the sausage is pre-cooked) and it came out great!
