Chinese soup

2 cups boiling water
2 teaspoons beef stock
1 chopped medium mushroom
1 chopped green onion
1/8 cup chopped white onion
1/4 cup chopped green pepper
1 cup noodles (even just the mr. noodles kind)
1 squirt of soy sauce

Boil together on medium until the noodles are ready, then throw in an egg or two, stirring until the egg becomes cooked flakes.

I worked in a Chinese restaurant for years, and I hope those of you who eat healthy can still enjoy some good Chinese food. There is little to nothing healthy you can find in a restaurant, so I have always made my own recipes at home.

I should add that this soup takes less than 5 minutes to prepare, cook and serve. VERY quick!
