I was floundering around on the internet this morning looking for ways to incorporate milled flax seed into my diet that did not include broccoli and came across this cookie recipie.

I'm not advocating this kind of behavior, but the recipe honestly looks like a good option for when you have to have something sweet. I haven't tried it but I'm going to later today.

Oatmeal Flax Cookies

1/4 Cup Butter (possible to substitute margarine?)
1/3 Cup Honey
1 Egg
1/2 tsp Vanilla Extract
1 Cup Whole wheat flour
1/2 Cup Oatmeal (not instant)
2/3 Cup Milled flax
1/4 tsp Salt
1/2 tsp Baking powder
1/2 tsp Baking soda

Cream butter and honey until fluffy. Add egg and vanilla and beat well.

Mix together flour, oatmeal, flax, salt, baking powder and salt. Stir into creamed mixture and mix until blended.

Form dough into 1 inch balls and place on ungreased cookie sheet. Bake at 350 degrees for 7-10 minutes.

Yield: 22 cookies

Each cookie is 78 calories, 4g fat, 10g carb, 2g protein.

Compare to a close encounter with a
Cherry Pop Tart: 204 calories, 5g fat, 37g carb, 2g protein

Of course, nobody can eat just 1 cookie so 2 cookies is
156 calories, 8g fat, 20g carb, 4g protein

You could add 3/4 Cup walnuts or almonds to the recipe, but I didn't do calculations to include them.

Again, I'm not advocating that anybody run out and start eating cookies, but as an emergency fix, this didn't look that bad.

I made these cookies last night and they are really pretty good.

I switched from regular butter to Land O Lakes Light Butter (no trans fats) and made 30 cookies instead of 22.

Now each cookie (without nuts) has 53 calories, 2g fat, 7.7g carb, 1.5g protein.
