Okay I am renting out a condo on the beach for a week and half this coming Saturday in Florida so it will be packed with a nice chef's kitchen. I thought this would be a fun idea for all those FT Chef's to pitch in.
Anyone wanna throw some good recipes out to me to cook up with my niece and her girlfriend? We will most likely be eating a lot of fish, chicken and occasional steak. Make the recipes semi-easy to cook up as we will be out and about most of the day, but whoever posts some after I make them I will send you the feedback on how we liked them. -------------- Bettia To be motivated, motivate others! |

RB, for fish my fav way to cook is simple. Tinfoil packets!! Spray the foil with like Pam spray lay the fish skin side down. Add a couple of pats of butter (if you want) and or olive oil. I like to a bit of both. Season to taste, I like a chicken seasoning, as well as red pepper flakes. Add garlic/onions and I also like a stir fry mix and or many veggies. I cook at 350-375 for about 12-15 mins or until it is flaky and done. Good luck! I either cook in oven or for best taste grill it in the packet.-------------- Curl Jockeys, get outta the squat rack! and if you want you can do that with just veggies my favorite is doing the packets with some lemon/lime whatever you prefer juice in the packet with about a tablespoon of extra virgin olive oil with about 2 cups of whatever favorite veggie and this cheap seasoning i found at the dollar store garlic pepper (garlic, salt, black pepper, dextrose)

Here is a marinade for chicken that is great - have nto tried with with steak but it cannot be bad - cook on the grill
2/3 cup olive oil 2/3 cup reduced-sodium soy sauce 1/4 cup lemon juice 2 tablespoons liquid smoke flavoring 2 tablespoons spicy brown mustard 2 teaspoons ground black pepper 2 teaspoons garlic powder 4 skinless, boneless chicken breast halves DIRECTIONS In a large bowl, mix the olive oil, soy sauce, lemon juice, liquid smoke, mustard, pepper, and garlic powder. Place chicken in the bowl, and coat with the marinade. Cover, and allow chicken to marinate a maximum of 4 hours in the refrigerator. |

Cajun Shrimp: Marinate large shrimp(I like to remove the shells but leave the tails) in the following:
chopped garlic lemon juice olive oil cajun spice (we call it blackening and I have a spice list if you want it-but you should be able to just pick up a cajun spice mix at the store-Emeril's are always good) The amounts of each really don't matter that much, i just base it on what flavours I want to stand out the most, but I do use a lot of the spice. Allow to marinate for a couple of hours or overnight. Then just throw on the grill or stir fry. Cook just until the shimp turn white. If you over cook shrimp they get very tough. I've found the bigger the shrimp, the better the taste! |

Okay everyone... The winner is......
CAJUN SHRIMP by Fly!!! It was awesome, thanks for that recipe! We threw it on the grill...located on our patio...looking out to the ocean! It was beautiful. We added a nice butter leaf salad to it and some brown rice to top it off. It was a wonderful dish. Runner ups: Rosemary Red Potatoes from the side dish thumb here on this site, which we had stuffed broccoli chicken and grilled portabello mushrooms. TinFoil Packet Fish by Mutt - which we used salmon and a side salad. Another delightful dish. I actually hooked my niece and friend on my protein smoothies which we had for dessert a couple of nights as well as a breakfast pick me up in the mornings we were dragging. All in all, with the food we made, along with the restaurants we ate out at (appetizers only & shared), and the tons of surfers we got to check out, it was a delicious vacation! -------------- Bettia To be motivated, motivate others! |
