The cool thing about this protein is it doesn't break down under heat, denature. It is made for cooking.

This is great info! As some of you know I have been trying to adjust several baked goods to be more healthy, with little success in the flavor category...lol. I did just find some cinnamon rolls at a health food store that actually were high in protein and low in fat. These are now my Sunday morning treat in place of donuts (my true weakness).
