Diet help: Dairy and soy free diet?

Hey! I'm returing as I'm trying to get in shape again after about a year off. I've been working out doing the eliptical and weights 5x/week for 2 months. I've lost 6.5 pounds and 3% body fat but I'm still not where I want to be and I'm actually bigger than I was before at the same weight so I really need to work on my % body fat. Now school is starting up again and I won't be able to workout as much (23 required credits + 30+ hours sitting in class!). I'm going to try to work out at least 3x/week but that may be challenging as we have more than 1 test/week. Anyways, I think I need to work on my diet. It isn't terrible but I do have bad snacks and I have a hard time deciding on what to eat for snacks (other than fruit and veggies) lunch and dinner. It is more challenging since I'm allergic to dairy (casin) and soy and often have a hard time avoiding them because I just don't know what to eat (poor, time contrained, picky girl!). I'm also confused about how many calories I should be getting in a day. This summer I ate:

1/2 cup oatmeal + rice milk + blueberries
gronola bar
rice/pasta + meat/beans + veggies
6 pieces chocolate (bite size candy bars)
salad + salsa + tomatoes + chicken + baked doritos

Any ideas would be helpful!
