I'm looking for advice on which kind of weight is more effective for the various lifts. As an intermediate lifter, what are the pro's and con's of using each? I currently use dumbells for almost every lift, would I gain more by using barbells? Thank you for your time!

Dumb bells force you to stabilize more, recruiting more/different fibers. They also allow for more angle variations in different exercises. They also make each arm do its work, as opposed to barbells, where the stronger, dominant arm can push harder and the weaker arm can 'go along for the ride' if you aren't mindful of pushing with equal force with both arms.The cons? You may not be able to go as heavy in some movements using dumbbells.
Barbells are useful, too, though. You can go a little heavier because you don't have to control the swing as much, for presses and deadlifts and squats, that means more weight and less stress on your hands/wrists/rotator cuffs. The cons are that they lock you into a range of motion that may not be a natural movement.
Incorporate both into your workouts.

I like to vary and I use dumbbells, barbells, machines, cables and even rubberbands when training.
Your muscles need different kind of resistance training to grow so don't be afraid to vary.
