I go this from the Cooking for Life book. Some decent dishes in there and fairly easy to make.
3 tbsps vanilla protein powder
1/2 cup egg substitute
2 slices your favorite whole grain bread
1/4 cup sugar free maple syrup (heated if you want)
Sprinkle of cinammon (optional)
1 pie tin or baking dish
Spray a non-stick pan with Pam or something like that. 3 tblspns protein powder in the pie plate, slowly mix in the fake eggs, blending with a fork. Sprinkle the cinammon on top and put a slice of bread in. Let soak for 10-15 seconds and flip over. Do the same with the other slice. Put in pan and cook, turn over (duh!) Serve with the syrup.
