im thinking of just eating like carrots or tuna

make it green veggies and tuna.
i think, i am not sure, carrot is high glycemic when not coocked and when coocked it lower a bit. but veggies are lower os try them.
at night you want to eat as less carbs as you can in order not to store unused energy.
why dont you try some cotage cheese and milk?
real low glycemic nutrtients and a lot of protein.
you can add some peanut butter if you dont care the extraa cals.

Something that should be mentioned here is that although carrots have a high GI, they are low in carbs. Because the GI is based off a 50 gram serving of carbs you need to about about a pound and a half of carrots to reach their proclaimed GI.
