feedback re: my workouts this week

WOW! FT.com information has been invaluable to me in my workouts. Question for all the more experienced lifters than myself: I'm 31, 6'6", 248#; 15%b/f(or so) have been lifting since around Jan, 2004. injured my shoulder in Feb and have just gotten my intensity back in the last month. This week, for the first time, I deviated from the FT.com recommended workouts eg. sets, reps. FT.com has my week like this:
Mon-Shoulders-forearms-abs
Tue-legs
Wed-chest
Thurs-Rest
Fri-Back/calves
Sat-Arms
Sun-rest
Wednesday I tried a new chest workout because I was having a problem with burning out arms before pecs. So I did the following:
incline,decline,flat fly; each with 5 sets starting with around 12 down to around 5 reps. Then I did: incline dumbell bench heavy weights/low reps 5 sets. Then flat dumbbell bench superset heavy weights low reps, followed by lighter weight flys 12-15 reps, 5 sets.

Today I did back as follows:
5 sets lat pulls beginning with 12 down to 4 reps.
5 sets dead lifts beginning with 12 down to 6 reps.
Superset: 5 sets chin up(assisted can't lift own body weight on this one yet) around 6 reps; immediately followed by bent over rows lighter weight keeping at around 10 reps.

Anyway, feedback and improvement tips regarding this workout would be greatly appreciated. THANKS!
