How long after training does the body continue to build muscle. Example - I train on a monday, feed the body with the appropriate nutrients..so when does the muscle building/growth cease?

your body will start bulging in half an hour after workouts as more pressure has been used on a particular muscle. after few more days that muscle will start to come back to shape as its getting used to your workouts. mostly after two weeks you can see muscles building up.
But as said by bennett, It mainly depends on each individual based on their diet and the way each exercise has been done.

Sorry i wasnt very clear. I usually leave around 4/6 days before I train the same muscle again to allow growth and to avoid overtraining. Surely there must be a peak time where growth is at it's maximum versus, i presume, a dip in growth during the days after exercise. My diet is clean but my protein intake/diet is at optimum levels for the 48hrs after the workout. Lets just say I trained chest on Monday and didnt train again until the friday/saturady when would the growth period tail off??

You should allow at least 5 days for your muscles to recuperate, IMO 7 days is even better, just my opinion.
