Hi - am new to this site: I am 6 foot 1, 183 lb, 27 years old - I have been working out for a couple of years, but as I am a "hard-gainer" I have tried both creatine and NO2 with mixed results. I currently use the GNC Isopure Whey Protein after working out, but I have recently read that I should be mixing my Protein Drink with Carbs - what is the best way to do this and what product is recommended so that I do not gain too much FAT ?

Many, many studies have shown that a 2:1 carb to protein ratio is best immediately after your workout. Do a search for some incredible post-workout meal suggetions, which have been posted in several threads.

Who cares what atkins has to say. You stated that you're a hard gainer. Do you want to increase your strength and mass or what? Protein builds muscle, yes. But it's the carbs that fuels them to lift, and prevents the catabolism of muscle tissue and the conversion of protein for energy.
