How do I know how much weight I should be lifting?

Everyone is different. Just explore with different weights. I would suggest start with lighter weights, and then slowly progress to higher weights when you have good form.

Also depends on what your goals are. If you are wanting to gain muscle mass then you need to find a weight that has you doing sets in the 5-8 rep range. If you are just wanting to get cut do lighter weights with more reps!

I would have to slightly disagree with conan - I would go heavier for lower reps pretty much regardless if trying to gain mass or lose weight

Getting cut is more about diet than anything. While high reps has it place time to time it really is not usefull to building muscle. I use them once in a while to change things up a bit..so I have to agree with atiger here.
-------------- Curl Jockeys, get outta the squat rack!
I wish everyone would get a partial amnesia and never use 'tone' ever again. (thanks Menance)
