I am trying to increase my protein amt and have read on several postings that cottage cheese is a good source. Problem - it is not the best tasting food in this world. Can I get ideas on how to make cottage cheese taste better. Any recipes? Thanks to anyone that can help

Yeah, I enjoy the taste of cottage cheese, but I know when I was younger mom would spruce it up with some fresh peaches or pineapples. Not sure where they fall on the nutrition list though. Another way of adding a little taste is just adding pepper.

I like to mix onions cucumbers and tomatoes in to it.
Also if you want carbs with it, boil some whole wheat pasta and put the cheese over it, and add some sugar free jam. -------------- We must become the change we want to see. Ivan Montreal Canada |

Blen it until a smooth consistency and add chives or spices to use as sourcream substitute (on baked potato, with popcorn on homade fajitas etc)

Here are some ideas that I found on the net..
"Tapioca" Pudding: If you like tapioca pudding, try this low-carb alternative. For each ½ cup serving, mix in ½ tsp vanilla flavoring and 1 packet artificial sweetener. Summer Fruit: A few strawberries, blueberries, diced peaches, chopped banana, or pineapple chunks sprinkled on top go a long way with cottage cheese. Stick with the berries if you prefer low-glycemic fruits. If the fructose is a concern, try using dash of tropical or strawberry-banana flavored sugar-free drink mix as an alternative fruity flavoring. Morning Preserves: Add 1 tbsp sugar-free or reduced sugar preserves per ½ cup cottage cheese Chocolate Mousse: Add a ½ scoop of chocolate flavored protein (or 1 tsp of cocoa + 2 packets artificial sweetener), 1 tbsp sugar-free chocolate instant pudding mix and whip in blender (you may need to add a little water or milk to thin it a little bit). Top with diced walnuts or almonds if desired and chill until set or ready to eat. Cottage Cheese and "tasteless tuna": if you boil tuna for 2 minutes in water, it loses about 80-90% of that nasty tuna taste! Just don't eat it hot. Pour cool water over it and drain it so that it is cool and dry and it is almost tasteless! Mix it with cottage cheese and Equal and garbanzo beans and it is perfect! Cottage Cheese Butter: 1 pint lowfat cottage cheese 1/4 cup water 4 Tablespoons nonfat dry milk 2 packages ButterBuds (butter flavor mix) 1-3 packages Splenda sweetener (the amount is to your taste preference - can also use Sweet-N-Low or Equal, but I think Splenda tastes better.) Put all ingredients in the blender. Blend on low and increase speed until smooth. Pour/scrape it all back into the cottage cheese tub and store in refrigerator. This is less than 7 calories per teaspoon. A huge difference from butter or margarine! 2 envelopes of Butter Buds Mix is equal to 1/4 cup of the Butter Buds Sprinkles. Also, Butter Buds has a refridgerator life of only 3 days once it's been liquified, so blend all the ingredients for this spread but wait to add the Butter Buds as needed. 1/4 cup of the cottage cheese mixture with 1/2 Tablespoon of Butter Buds Sprinkles mixed in at the last minute is the right ratio. let me know if anyone tries any of these and they're opinions.. thanks |

Here's one more.. this is a regular in our weekly dinners.. Excellent source of protein and VERY good!
Spinach Pie: 1 Sauteed Onion 2 Boxes of frozen chopped Spinach (thawed and squeezed) 1 24oz Cottage Cheese (we use fat free) 1 8oz shredded cheddar cheese (we use fat free) 2 eggs (we use egg beaters) Mix all together and put in pan (about 8x10). Bake on 350 for about 40 minutes or until lightly browned. keep in fridge and nuke when ready to eat.. |

1 1/2 cups Fat Free Cottage Cheese
2 TBS Natural unsalted peanut Butter 2 TBS Sugar Free, Fat Free, Strawberry Jelly Concoction is Called Peanut Butter and Jelly Cottage Cheese. 450 Cals. 47 Grams Protein 34 Grams Carbs 16 Grams Fat. Try freezing it for a 'close to ice cream' treat. ------ *Protein Jello* Add one cup of boiled water to a package of sugar free jello. (You can add a little vanilla protein powder, too if you want - I add 1 scoop) Put 2 cups cottage cheese in the blender or food processor. While blending slowly add the jello mixture to the cottage cheese and blend until it's all smooth. Pour into 4 cups and take a small can (the kind that has 2 servings) of fruit (whichever kind matches your jello) and drain thoroughly - chopped them up and disburse them throughout the 4 cups of jello. I made it with orange jello and little bits of mandarin oranges and then with raspberry jello with bits of peaches. The breakdown is around 130 calories, 8 carbs, 17 protein - so 2 of them is a serving or you can add more protein powder and fruit or have it with something else. ------ *Pineapple Cheesecake* 1 cup low-fat vanilla wafers ~ 2 Tbsp melted margarine 4 scoops vanilla protein powder 3 oz sugar-free lemon Jello ~ 1 cup boiling water 2 1/2 cups low fat cottage cheese 1 Tbsp granulated sugar ~ 8 1/2 oz crushed pinapple ~ 1 Tbsp water ~ 2 tsp cornstarch Combine one cup finely ground low-fat vanilla wafers and two tablespoons melted margarine in a bowl. Mix well. Press a layer onto the bottom of a medium pie pan. (I usually cheat and buy a pre-made low-fat crust.)Combine four scoops of vanilla protein powder, three ounces of lemon-flavored gelatin, and one cup boiling water in a saucepan. Stir until gelatin has completely dissolved and cooled slightly. Combine 2 1/2 cups low-fat or non-fat cottage cheese and one tablespoon of granulated sugar in a blender or food processor. With motor running, add gelatin mixture in a thin, steady stream, and process until well blended. Pour into prepared crust and chill thoroughly. Heat 8 1/2 oz crushed pineapple in juice in a small saucepan, over medium flame. Combine 1 tablespoon water and 2 teaspoons cornstarch to make a paste. Stir cornstarch mixture into pineapple. Heat and stir until mixture comes just to a boil and thickens. Remove from heat and cool completely. Spread on top of cheesecake. Chill thoroughly. Makes 5 servings. ------ Cheesecake Fluff 1 box any flavor SF Jell-O 1 cup boiling water Combine Jell-o & water. Stir until gelatin is dissolved. Let cool on the counter top for 30 min. Do not chill in fridge. 8 oz. cream cheese 1 cup cottage cheese 1/4 cup Splenda Soften the cream cheese. Beat cottage cheese, Splenda and cream cheese together. Whip together: 1 cup cream 3 T. Splenda 1 T. vanilla Blend cream cheese mixture into whipped cream. Fold in Jell-o. Pour into an 8x8 glass dish. ----- Blueberry Cheesecake 1 cup BLENDED cottage cheese 1 tablespoon sugar free FRENCH VANILLA jello powder mix 1 teaspoon vanilla extract 1/4 cup blueberries Stir the blended cottage cheese with the french vanilla jello mix. It can be done by hand but will be smoother if you use a blender. Add the vanilla extract. Then stir in the blueberries. Let set in the frig for about 15 minutes to let the jello set. This tastes great with any fruit. The key is the french vanilla pudding... it makes it taste like cheesecake! ---- Brownies 4 egg whites 1/2 cup nonfat cottage cheese 1/2 tsp vanilla extract 1 cup Splenda 2 tsp butter buds 1/3 cup cocoa powder 1/4 tsp baking powder 1/4 tsp salt 1/2 cup oatmeal (uncooked) 2 servings protein powder (to equal 50 g of protein) 1/2 cup walnuts (optional) Beat egg whites in small bowl. Gradually add Splenda and vanilla extract; beat well. Blend in cottage cheese and butter buds. Combine oatmeal, cocoa, protein powder, baking powder, and salt. Blend in blender (or with hand blender) until cottage cheese curds are gone. Stir in walnuts. Spread in a Pam sprayed tin. Bake at 350 degrees for 20 - 30 minutes. This pan of brownies would be approximately 2 servings ----- That should be plenty to try.. let us know how they are if you try any.. |

If you don't have Splenda, you can probably use the Equal By The Spoon..
Butter Buds is in the spice section. It's a fat free butter flavor powder. I don't have the nutritional breakdown.. it was just something I found on the net |

Pears are excellent with cottage cheese, as well. Personally I prefer to "stuff" a tomato with cottage cheese and pepper it real good - yum!
