I can't eat any more!

I'm really having trouble sticking to my diet plan. I'm a hard gainer who is try to gain mass. Things are going pretty well, but I can barely eat 2500 calories a day. I am ok for short periods, but I reach a point where I just can't force myself to eat any more. This has been a problem I've had for a long time. How do I consistently eat between 3500 and 4000 calories a day?

Any suggestions would be greatly appreciated.

I'm a consultant, so I travel during the week. I eat a big breakfast if I have time; Eggs, pancakes, fruit.. For lunch; things like chicken breast or salmon with a potato or other carb and a vegetable. For dinner; steak (filet) or chicken breast with carb and vegetable. I useually try to have some kind of snack in the evening, PB&J or something. I also eat 2 bars during the day to supplement.

Try throwing in a couple MRP's...a shaker bottle and some water is all you need. 2 of these drinks added will add about 560 calories on average. they are easy to chug down, quick, and will still allow you to eat our other meals. Good nutrition too on the go. Usually about 40 gr. of protein, 22 or so carb. Hope this helps.

Another thing to do is to ease into the extra kcal consumption. If you're use to eating 2k a day, don't just jump into 4500! Gradually increase it, getting your digestive system used to the more food, thereby also increasing your metabolism to handle the increased amount.

One thing I'd like to add, being a hardgainer myself, is the "fear" of eating so many cals. Don't be afraid to consume so many cals.

How much do you weigh right now.
As mentioned, don't feel like you have to plunge right into the 3K+ range. Ease into it. Do 2500 for a week, then go to 3000, etc. I'll be honest, having been a consultant myself, doing 100% travel, it is difficult to maintain proper eating habits. It's much easier if you're on a long term project and can use corporate housing or if you can find a place like Resident's Inn or Staybridge Suites where you get a fridge and kitchen.
