Yes there are many different kinds of fat. french fries are bad for more than one reason - not necessairly the fat they are fried in, most places have switched to vegetable fats instead of lard. but they retain so much of the fat when they are cooked, uck. Anyhow - the proces of frying foods has been found to cause changes in the foods which create carcinogens - cancer causing agents. I don't think the fat in cottage cheese is good fat - but eating a lower fat cottage cheese you are getting minimal fat while stocking up on calcium - which has been found to help in bodyfat release - and protein, much needed for muscle growth and function, also vitamins A&D. You should lok up some articles on good fats - the best types of fats are from non-animal sources and they avry from really healthy (flaxseed, fish oils, lignans, nuts) to less healthy (canola oil)(still better than lard or cocnut or palm oil, though). A good rule of thumb with fat is if it is solid at room temperature it isn't good fat. That doesn't include avocados, though, which are good fat. do a little reading at your local library - including the right fats in your diet will actually make your body function better and you will reach your fitness goals easier.

YES there are different types of fats. Low fat cottage cheese is eaten for it's protein content not for fat. FF's are a fried food usually in lard or vegetable oil shortening, and is high in calories and is not healthy. Good fats are olive oil, Flax seed oil, fats from salmon. Trans fats, or hydrogenated fats are unhealthy, these are processed liquids that are made in to a solid through hydrogenation, and stick to our artery walls.
