Normally I would eat around 500 calories a day, but on top of that, I'd try to watch my fat and carbs intake as well. Unfortunately, I've done nothing but GAIN weight. I want to lost 25-30 pounds and according to this site I need 160 grams of protien; 320 grams of carbs; 26 grams of fat and 2131 calories. Won't I gain weight? I mean, if I didn't LOSE weight the other way, how am I going to this way?
Any input is appreciated.

You actually lived on 500 cals a day or is that a typo? Really you need to eat to loose. Think of it this way if you ran you car on low gas all the time it would not run right same for you body you need to feed it. If you are working out and eating right you will loose body fat and gain muscle. Now fat weighs less than muscle, but fat takes more space. So you might see a weight gain but size loss. That is what you want. The more lean mass you have the easier it is to burn fat. Try the diet and remember it is a guideline not set into concrete. I know that when I do not lift weights I tend to eat less, nd vice versa. Hope this helps

You must have underestimated on the calories. A normal person in a coma requires over 1000 calories just to maintain normal body function. However, if you did not underestimate, start eating more NOW. You'll never lose weight eating that little - how about that for irony? Your body is evolutionarily programmed to resist and adapt to changing conditions. When you eat that little, your body thinks that there is a famine or something and begins to hoard away any calories it can - as fat - at the expense of your day-to-day energy levels.
Without knowing how much you weigh, I can't tell you if 2100 is too high . . . so fill me in . . .
