I try and limit this to immediate post workout, while keeping levels low at all other times (barley, crucifers, etc...). I suppose my question is what is best for insulin spiking? Up to this point, I've been using blackstrap molasses in my PWO shake, but I've only been assuming that it's high on the glycemic index. I'm hoping so, because it's also a great source of minerals.
While I'm on the subject too, could someone explain the difference between glycemic index, and glycemic load?

I loaded up on carrots last time I went grocery shopping under the impession that they were low on the glycemic index, but it turns out that they're just low on glycemic load, and very high on the index. Needless to say, I'm confused.

GL is the quantity of the carbohydrate portion of the food. I am not a chemist so I can't explain. I am sure if you do a google search you will come up with the definitions.
