I sautee foods (onion and garlic mostly) with olive oil, and try not to do so on a high heat. Is this unhealthy (I'm referring to the idea that heat manipulates the structure of olive oil).

When sautéing or frying, use either a combination olive oil (one that is simply a blend of extra virgin and regular olive oil) or a straight olive oil.
For deep frying, the olive oil grade "olive oil," is excellent because it has a higher smoke point (410º F) than virgin or extra virgin oils.

It is not unhealthy to cook with Olive Oil. Of all the Oils Olive oil is one of the healthiest to cook with, as it has one of the lowest percentages of Saturated fats.
As for deep frying, Olive oil is not your best choice. Peanut oil is a better choice, IMO. Taste wise, and it has a higher Smoke point, and not much higher Saturated Fat %. But having said that, deep frying is not a cooking method you want to be doing often. And when you do, ensure the oil is hot (350-375) before you put anything in.

olive oil is one of the healthiest oil to cook with but cooking it too long means you also cook a way all the good stuff that is in it. i usually put a small amount of olive oil right before i take my vegges of the heat.
