I'm still not eating quite enough calories (about 1600 for a 147 pound person), my diet is clean with good carbs and enough protein thanks to the addition of shakes. I really, really, really love sauteed mushrooms. If it doesn't make me go over my fat allowance (24g) would it be okay to sautee some mushrooms to add to my dinner? I would use extra virgin olive oil, of course. The mushrooms would accompany brown rice and chicken/fish for my dinners.
I've also been using fat free mayo for tuna salad and egg salad sandwiches. Should I maybe switch to low-fat to up the cals and fat without having to eat more or should I just simply make myself eat a few bites more at every meal?
My calorie breakdown roughly follows:
bfast- 300 cals, snack 1- 200 cals, lunch- 500 cals, snack 2- 200 cals, dinner- 400 cals
should I add a 12oz cup of skim milk before bed time? I don't want another meal in there because I go to bed around 10 and don't like to eat too close to bed time especially after I've exercised.

Not sure about the sauteed mushrooms, but I'm impressed that you could stomach the fat free mayo. I tried it and just couldn't do it

Bobo, if you aren't trying to compete, eat a few mushrooms. As s prebed snack instead of skim milk, eat some cottage cheese. It very slowly releases protein as you sleep. I really like cottage cheese with some almonds or sunflower seeds. They add a little protein and good fats.
