Will lifting weights while dieting maintain muscle mass, or will it speed up muscle loss?
(provided you are eating plenty of protein)

You will inevitable loss a little muscle when cutting down. The goal of any diet plan should be to maintain as much muscle as possible. When dieting you need give the muscles a reason to stick around. This is where weight training come into play. So...no, lifting will not speed up muscle loss it will slow it down assuming that you are not completely starving yourself.
