DIET MEANS CALORIES!
do you know your caloric intake???
And from the sounds of that diet it would be way below caloric intake which is probably why your body is holding onto fat because you are starving it

10 cal per lb bodyweight BARE MINIMUM
I am losing weight and maintaining a 12 cal per lb diet, 50% protien 20% fat 30% carbs

so to recap you need 10-15 cals per lb bodyweight daily, eat every 3 hours 3 meals 2 snack (or three if time permits) 1-2g protien per lb bodyweight, carbs should be no more that 2-3g per lb bodyweight and keep your fats in check sound like you know a healthy diet but looks like you went too extreme...I put on 8 lbs myself because i was only eating 1k cals a day instead of losing i gained thats what happens......need to track your diet and check that out
