I'm prepping to get underway with a cutting phase and I'm planning on hacking my carbs more than usual (under 100g as opposed to 150g) to see how it works for me. I need advice on some good low carb lunches that I can prepare at home and take to work (or even find at restaurants) other than the usual chicken breast or can of tuna. Any suggestions or recipes would be greatly appreciated, particularly stuff that won't get ruined in the microwave. I'm sick of the Subway double meat roast chicken salads!

mackfactor, try doing a search on here for low carb meals and see what you come up with. I am sure there are many, also, i myself get a lot of great low carb meals on www.24hourfitness.com. I get recipes emailed to me daily and some of them are exceptional.

Chicken Cordon Bleu
6 boneless, skinless chicken breasts( 4 0z each) 2 tablespoons Dijon-style mustard 3 slices reduced fat swiss cheese, cut in half 3 slices lean ham, cut in half 4 slices reduced calorie whole wheat bread 2/3 tablespoons dried parsley flakes
preheat oven to 350. pound chicken breats betwee 2 pieces of wax paper to 1/4 inch thickness using a meat mallet or rolling pin. brush mustartd on 1 side of each chicken breast, and then layer 1 slice ham and cheese over mustard.
Tear bread into pieces and place in a blender or food processor. pulse-blend into breadcrumbs. place breadcrumbs in a shallow dish, add the dried parsley flakes and mix well.
roll up chicken from the short end and secure with toothpicks and set aside. lightly spray with nonstick cooking spray and roll in breadcrumbs to coat. arrange chicken in a baking dish sprayed with non stick cooking spray. cover and bake for 10 minutes, uncover and bake an additional 15 minutes or until chicken is no longer pink.
6 servings serving size: 1 chicken breast

Baked Parmesan Perch Recipe
4(4oz) perch fillets 2 slices whole wheat bread 1/4 cuo grated parmesan cheese 1 tablespoon dried basil 1/2 teaspoon paprika dash of pepper 1 tablespoon light margarine, melted 2 tablespoons dried parsley
tear bread and process into crumbs using a food processor or blender . move oven rack towards top of oven and preheat to 500, spray rectangular glass baking dish with nonstick cooking spray. combine breadcrumbs, parmesan cheese, basil and paprika and mix well.
wash fish fillets and pat dry with cotton cloth. generously brush one side of each fillet with margarine, dip into breadcrumb mixture and place coated side up in the prepared pan. bake uncovered about 10 minutes or unti fish flakes, sprinkle with parsley.
makes 4 servings serving size 1 fillet
