Hey - here is a good one for the grill, made it last night, was very easy and tasty.
Slice three or four (a 20 oz package) boneless, skinless chicken breasts into 1/2 inch slices and marinate in your favorite marinade (I like McCormicks spicy caribbean) for a few hours in the fridge.
Start the coals on the grill..
Cut 4 big sheets of tinfoil (about 18"X12")
Peel and slice two medium sweet potatoes and two reg potatoes (or all of one kind, if you prefer).
Slice an 8 oz package of mushrooms (or buy pre-sliced,even easier. I used baby portabellas because they were on sale).
Now layer alternating slices of sweet potato and potato in the center of a tinfoil sheet, then a layer of cgicken, then top with a layer of mushrooms (repeat with reamining ingredients to make four equal packets). Drizzle each packet with 1/2 to 1 tsp olive oil.
Fold up the foil, wrapping the edges under each other to seal (kind of like a burrito).
Place the packets face down, over medium hot coals on the grill for 15 minutes, then turn and cook another 10 - 15 minutes.
This makes four female sized servings or two male sized servings. (5 oz of chicken per packet).
Enjoy!

I know by commenting I am bringing this back to the top, but this is a great one! I have done this twice now and even my 14 yr old loves these, and he rarely eats what I do. I even made extra ones to have on hand for the next couple days. I also added a slice of onion and a sprig of tarragon, but that's just what I like. I imagine rosemary would be good too. Does anyone else have packet ideas like this one?

I have another good grill recipe - marinate zucchini and summer squash, sliced lengthwise about 1/4 inch thick, in some olive oil, a little soy sauce, minced garlic and ground black pepper while your grill heats up.
Once the grill is hot lay the slices across the grill (careful, they want to fall in, but it is worth thetrouble). Grill a few minutes on each side until slightly crispy and still a litlle firm (they get mushy if you cook them too long).
Portabella mushrooms marinated in Italian dressing are really good on the grill also.
And for dessert try grilling pineaplle rings, they carmelize and taste like candy!
