add protein powder to your oatmeal, include some rice with your meals, whole grain breads, and increase to two chicken breasts, or a can of tuna or salmon. Lots of things to do. Salad tends to be nutritionally void, add some slivered almonds, sunflower seeds, a little cheese. Have another meal of some sort after dinner and before bed..
