So, now I have a freezer full of deer, and don't know what to do with it. You can only roast and grill so much. Any ideas?

Have you tried canning? My parents used to do that when I was a kid and it was awesome. Cut the meat into cubes, place them in the glass Mason jars, and use a pressure cooker to seal them. The canned meat will be be good for a long, long time. Canned deer meat, rice, and gravy was the best meal. My dad also like to make jerky. He sends some to me here in Florida every year. Since deer meat is so lean the jerky doesn't have any fat for you to worry about at all.

I'd never heard of canning deer meat. How do you prepare it before canning (roast, fry, grill?). My husband's uncle is having one deer of his made into summer sausage.
