Natural Peanut Butter always has all of the oil at the top of the jar...Should I dump this out or should I just keep it there? I'm not sure if that's the good fat and whatnot.

Stir it in. When I bring it home from the store, before I open it and thus have to refrigerate it, I store it upside down so the oil rises to the bottom of the jar. Then when I open the jar I stir it before the oil works its way back to the top of the jar. It's a lot less messy that way. Then refrigerate. If you dump out the oil, you're going to have really dry peanut butter. And that is the good fat...and adds to the flavor. I suppose if you wanted a lower fat peanut butter, you could pour off some of the oil, but it will affect the texture and spreadability.

Store your pb upside down. This will elimate the need for stirring each time. Or you could just get Skippy all natural extra chunk! Great stuff.

I found some great stuff in the health food store today, tastes great too!
It is called Naturally More(what peanut butter should be(from the label, not my claim))
2 tbsp. 169 calories
10 gr. protein
8 gr. carbs
4.1g. Omega 3
2 gr. sugar

Hmmm...I never have to stir my more than once (Laura Scudders). But you do have to refrigerate it, so maybe if it wasn't refrigerated?? I thought when I looked at the label for Skippy All Natural it wasn't really all natural? It was made with more than just peanuts...? No?
I remember the first time my mother brought home all natural peanut butter, one taste and I could never go back to any of the fake stuff, where they take out the natural peanut oil and replace it with something like shortening and add sugar. Yuck!

Ever try Almond butter? You may not be able to close the jar it is so dam good. :)
Skppy All Natural by the way has minute amount of sugar, salt and palm oil. This amount is so small that if you ate the jar in one sitting, there would be no adverse affects of any type(other than way too many calories :))

Still bb1, how can they call that all natural? Well, okay, I know anybody can call anything all natural because it is just a marketing term and not regulated in any way, but it is misleading. All natural peanut butter has always meant "peanuts and salt, that's all" or no salt. Until Skippy decided to capitalize on the term. It pisses me off.

There is a limit on anything, forget the numbers off hand, but if the amount is under that limit, they can call it what they want.For instance fat free may not necessarily be fat free, just under the limits by law so it can be called that. Low fat also has the same type 'number' asscociated with it.
