Ok everyone I need some help. I have been a stay at home mom for over a year now. It has been so easy to eat, since I can make whatever I want. I dont have to feel rushed and can actually cook ect.
I can work out whenever I want ect. I was offered a new job back in the trucking industry and it is a job that I can not pass up. The only problem is that with my job, I will hardly have time to pee let alone go out for food ect.
So I am trying to find things that are quick to fix and eat that will be heatlhy. I will have to get up at 5:30 in the morning to get to the gym, then get ready at gym, leave for wrk and not return home til around 7:15pm.
Anyways do you have any ideas?

Hey hotfitmom welcome back! 5:30-7:15 is a long day. I work full time and have to get my kids ready for school and make lunches for all of us (not one of us has the same thing for lunch!) all before I head of for work at 8:15.
What I find works best is to make sure there is something portable in the fridge ready to go. I make up a bunch (like 6-8) chicken breast on the weekend by using different marinates and then grilling them all at once. I also buy prepackaged cut up lettuce and always have red peppers (my favorite) and other quick vegies and fruit ready for salads or just to eat as a snack. This week I also made a batch of brown/wild rice in my rice cooker and threw this in the fridge. In the morning I just grab a container and throw whatever into it. 1 day salad + chicken breast, a small whole wheat tortilla with PB on it, a small yogurt and some cut up red pepper. This gave me lunch plus 2 snacks. Another day it was rice,veggies,chicken all in the same container + cottage cheese/fruit and a small container of almonds. Today I threw in some black beans, rice and chicken, banana/PB and cc/fruit. Next week I think I'll cook a couple of marinated pork tenderloin--you get the picture. Having some hard boiled eggs is handy as well. Tuna's a great option. At work I keep a supply of oatmeal and some protein powder for "emergency" meals, like when I have to work late. Now granted, I have access to a small fridge and microwave, which helps. I could live without the microwave, but the fridge is invaluable. I have a thermal lunch bag that I fill every morning with my food for the day and I put it in the fridge when I get to work.....well most days I do anyway:)
Because your day starts so early, I'd throw your lunch etc. together the night before and put it in the fridge, that way its ready to go. It pretty much gets to be routine once you get going. Just make sure you have emergency supplies like tuna and whole wheat tortillas, for those day you haven't anything else.
