For the next few days at work I am scheduled to work 12 hours shifts and where I work we have no microwave or refrigerator to keep anything and I thought about taking a cooler. What should bring during these 12 hours I get 2 b reaks and a 1/2 hour lunch. Im on a diet to lose weight so nothing fatty...Anyone wish to throw me some ideas? I know some of you have some good ones.

Tuna might be an idea, Use to live tuna sandwiches but cant eat bread *boo* god im starving for a sub or something!!!...Keep throwing me ideas so I can pack a big old cooler :)

If you can have a cooler there are lots of options, just depends on if you like them or not.
Cold chicken breast and brown rice, still tastes good :)Cottage cheese and add a fruit or tons of fresh veggies or yogurt, string cheese although I'm not sure you would go for that. Hard boiled eggs, can of tuna, the heck with the bread, throw it on top of some lettuce add some pickles, tomatoes, onions, just keep it in separate containers until you're ready to eat it. Take some turkey and wrap it up in some lettuce leaves add in some filler of other veggies maybe a dash of mustard. Make up some protein bars, there are TONS of recipes out there my fav is pumpkin protein bars. woah Damsel you rock, I never thought about wrapping meat up in lettuce, Great idea...I was thinking of making a few chicken breasts wrap them up in foil and keep them in a thermal bag of some sort but, Im not sure how that would work out.
Id be interested in some of your recipes even the secret ones you may or may not share! Thanks |

Pumpkin Pie Meal Replacement Bars -------------------------------------------------------------------------------- Ingredients 1C Oatmeal 5 Scoops vanilla protein powder 1/2 C non-fat powdered milk 1T Splenda 1 1/2 t cinnamon 1t Pumpkin pie spice 1/2t ground ginger 1/8t ground nutmeg 2 egg whites 1/4 C fat free cream cheese 2t canola oil 1C canned pumpkin 2T water Procedure Preheat oven to 325. In a bowl combine oatmeal,protein powder, dry powdered milk, splenda, cinnamon, pumpkin pie spice, ginger, and nutmeg. Set aside. In another bowl combine egg whites, cream cheese, pumpkin, canola oil, and water. Beat until smooth. Add the oat mixture beat until all is combined. Spray a 9" square pan with cooking spray. Pour batter into pan bake for 30 min. or until toothpick inserted in center is clean. Nutritional stats per serving are; Calories: 190 Protein: 22g Carbs: 18g Fats: 3g NOTE: If these come out too dry next time add another Tablespoon of water. ------------------------------------------------------------------------------------------ ---------- Homemade Protein Bars Ingredients 2 cup oats 1 1/2 cup chocolate protein powder 4 tbsp. natural peanut butter Procedure Mix all ingredients together in a bowl and add enough water to make a very stiff dough Spray an 8x8 inch cake pan with Pam and press in dough evenly. Refrigerate a few hours to harden, then cut into 8 - 12 bars, depending on requirements. Wrap bars in plastic wrap & store in fridge. 6 Bars: 167.5 calories 16.3 grams protein 13 grams carbs 7.3g fat -------------------------------------------------------------------------------------------- -------------- ShannyCakes This recipe makes one BFL portioned meal for most ladies. 4 Egg Whites 1/4C Cottage Cheese 1/2C dry measure Oatmeal Cinnamon - 1tsp or more to taste Splenda - 4 packets or to taste (optional) 1 cap of Vanilla Extract Place all ingredients into a blender for 20-30 seconds. This makes a very thin watery batter. Preheat a non-stick pan on low to medium low. Spray with cooking spray and pour in the batter. I make 1 large pancake but you can make several smaller ones. The pancake is ready to flip when small bubbles appear on the top of the batter. ** Gentlemen would need to add another 4 or so eggs and another 1/2C or so of oatmeal (or fruit) to this recipe. ** Add 1/2 a banana (or other fruit) in the batter for a change of pace and a boost in carb count for this meal. ** Try adding canned pumpkin and some additional pumpkin pie spice for another variation of this meal ** cook up 4-5 pancakes in advance for a tasty and very convenient on-the-go meal! As soon as the pancake has finished cooking, flip onto a sheet of plastic wrap. Roll the pancake like a fruit roll up or a burrito, cover in plastic wrap and store in the fridge. This will keep your ShannyCakes soft and moist. ------------------------------------------------------------------------------------------- -------------- CPB Pam's Yummy Protein Brownies 4 egg whites 1/2 cup nonfat cottage cheese 1/2 tsp vanilla extract 1 cup Splenda 2 tsp butter buds 1/3 cup cocoa powder 1/4 tsp baking powder 1/4 tsp salt 1/2 cup oatmeal (uncooked) 2 servings protein powder (to equal 50 g of protein) 1/2 cup walnuts (optional) Beat egg whites in small bowl. Gradually add Splenda and vanilla extract; beat well. Blend in cottage cheese and butter buds. Combine oatmeal, cocoa, protein powder, baking powder, and salt. Blend in blender (or with hand blender) until cottage cheese curds are gone. Stir in walnuts. Spread in a Pam sprayed tin. Bake at 350 degrees for 20 - 30 minutes. This pan of brownies would be approximately 2 servings for me. Here's the nutrition info per serving: W/out nuts: cal = 268, p= 42g, c= 21g, f= 2g with nuts: cal = 432, p= 46g, c= 24g, f= 18g I personally have only tried the first and third recipe, I have heard good things about the other 2 also. Cupcake, no one has ever accused me of being a cook ; ) Dunno what would happen, adding more water if making the first recipe would be appropriate I'm sure.

Flex's Power Muffins-3 Servings
12 egg Whites 1 1/2C Oatmeal 1/2C Cottage Cheese 12 pkg. Splenda 1tsp Cinnamon 1 tsp baking powder OR baking soda 1 tsp water Whip the you know what out of the eggwhites, flourize the oatmeal and blend all of the curds out of the cottage cheese, also add the wet ingredients to the eggwhites while beating, then add the oatmealflour. Pour batter into 12 muffin cups sprayed with LOTS of pam or they will majorly stick! Bake at 350 for 20 to 25 min. You can also add 1 tsp. of any extract to make different flavors! 4 muffins = 1 serving! If your interested in a change of pace on the chicken, sprinkling some Ranch powder over it and then baking it is pretty tasty! GoldenGloves, do you do whole wheat tortillias? Your recipes are wonderful, Damselfly, I can't wait to try some of them! I like the whole wheat tortillias idea, I haven't seen any where I shop yet, is there a lot of difference there vs. regular? I would like that a lot.
I like to sprinkle my chicken with lemon pepper seasoning, it takes just a smidgen and it packs in a lot of flavor, especially if you grill them, too. Just a word of warning, protien has a cohesiviness to it that may make the protien bars tough if you add extra powder to them. .

Veda, I have only had wheat tortillas once and I don't even think I ate them lol I know a lot of people that do BFL and they use the wheat products. I personally don't eat any bread products at all, I live mostly off of sweet potatoes and fruit specially when all the yummy fruit is in season. The ranch powder is to make ranch dressing with but instead of doing that I just pop open the package and sprinkle it over the chicken. You can do the same with dry onion soup mixes as well. yeah I tried another thing yesterday, damselfly. I got some cayenne pepper, chopped some oregano, basil and added just a tad of splenda on the broth and let it simmer dry so the chicken can absorb it, and it's so good, it almost feels sinful to eat it :) I throw it into a whole wheat bread, add a heap of lettuce on it and some fat free dressing and I'm done for lunch.

I just tried the Shanny cakes. Very tasty and easy to make, even though I burned one side... I was so selfish with the pumpkin bars I never let my kiddos try them lol My youngest likes oatmeal with vanilla whey protein in it and my oldest like cream of wheat with chocolate whey protein though :)

I made the home made protien bars last night. The dough never did harden properly, so I just froze them and ate them like that. I think I added to much water. How much water should I add? I've never personally made these bars so even I would only be able to go by the instructions given (add enough water to make a stiff dough.) Did you refrigerate them for the few hours that it said to? Also if you did add to much water it would explain your problem.

I did let them sit in the fridge for a few hours. I also frooze some in the freezer to see how that worked. Unfortunately when I took them out and brought them to work they melted again.

Okay, I tried the recipe again and this time I baked them into cookies. They turned out pretty good; kind of soft and spongie like the bars you buy from the store.
