Wow, I don't know why i haven't eaten this kind of fish before!!!!
here is what i did, I bought some frozen orange roughy on sale, and let it thaw in the fridge.
Then I sprayed a baking dish w/olive oil spray, sprinkled Emerils Asian eseence blend on the fillet and lightly sprayed them with the olive oil, baked at 400 degress for about 25 minutes - so moist and delicious! This fish is almost like crab, it is really firm and very falvorful , but not fishy.
Hope you all enjoy it.
Any other good recipes for orange roughy?

I absolutely LOVE orange roughy - a great fresh water fish. The only problem I have with it is that it is usually so damn expensive. If you find it cheap, stock up!

I use Olive Oil spray, Garlic Powder and Lemon Pepper on most of my fish - except Tuna, then I use Dill. It's usually a little cheaper if you buy it in the frozen food section instead of the fresh seafood isle.

Orange Roughy is one of my favorites too. You can also put it in a foil packet with some spring onions and colored peppers, seasonings and olive oil or the spray stuff and cook in the oven or on the grill. If you make sure the foil is tightly closed it should puff up as it cooks.
