perfect mashed potatoes

Okay, if you're gonna eat comfort food, at least you can make it healthy! Cube the potatoes with the skins on (more nutrients when you don't peel 'em) boil them until tender and mash with a fork. No salt, No Cream, No butter! Add a good shake of dried basil, low fat cream cheese, and a splash of skim milk. I always mash some roasted garlic into them. The cream cheese will melt and you stir and make them really rich tasting. These actually look and taste just like the kind you get at a fancy restaurant.

Sweet potatoes work just as well (minus the skins) :)

You can put a fat-free chicken broth in as well!

Oh that sound realllllly good. I luv mashed but eat it plain. Gonna try that out.
Just to let you know in the restaurant mashed potatoes, there is about 5 days worth of fat in one serving!
